Tropical vegetables

In the tropics, leaves, fruits and young shoots of many plants species are eaten as a vegetable (Tropical vegetables 6).

Leaf vegetables (Tropical vegetables 2) are:
- amaranths, like Amaranthus caudatis and Amaranthus leucopardis (see Amaranthus sp.);
- Indian spinach, Basella alba;
- tossa jute, Corchorus olitorius (see Corchorus capsularis);
- water spinach, Ipomoea aquatica (see Ipomoea batatas);
- quinoa, Chenopodium quinoa (see Spinacea oleracea);
- endive, Cichorium endivia.

From okra, Hibiscus esculentus, both the young leaves and the fruits are eaten. Leaves of the horse-radish tree, Moringa oleifera, are eaten as a vegetable.

Well known tropical fruit vegetables (Tropical vegetables 3) are:
- okra, Hibiscus esculentus;
- breadfruit, Artocarpus altilis;
- jackfruit, Artocarpus heterophyllus (Tropical vegetables 1);
- avocado, Persea americana;
- aubergine or eggplant, Solanum melongena.

The Cucumber family (Family Cucurbitaceae) also includes a number of fruit vegetables (Tropical vegetables 4):
- edible marrows, Cucurbita pepo (see Cucurbita sp.);
- wax gourd, Benincasa hispida (see Cucurbita sp.);
- angled loofah, Luffa acutangula (see Luffa cylindrica);
- smooth loofah, sponge gourd or vegetable sponge, Luffa cylindrica;
- bitter gourd, bitter cucumber or balsam pear, Momordica charantia;
- chayote or christophine, Sechium edule;
- snake gourd, Trichosanthes cucumerina.

A variety of pulses are consumed because of high protein content. Among those are many species of the bean Genus Phaseolus; together with:
- groundnut, peanut or monkey nut, Arachis hypogaea;
- soya bean or soybean, Glycine max;
- chick pea or gram, Cicer arietinum;
- lentil, Lens esculenta;
- lablab, Lablab niger;
- pigeon pea, Cajanus cajan;together with a large variety of species less significance.

In China and Japan the young sprouts of some bamboo species (e.g. Dendrocalamus asper, see Bambusa vulgaris), and of aralia (Aralia cordata), are eaten as a vegetable.
