Sambucus nigra

Elder

Family Caprifoliaceae

Sambucus nigra, elder (S. nigra 1), is a deciduous shrub or small tree with a corky bark and a large proportion of white pith in its branches. The leaves are pinnate. The small cream-coloured flowers are borne in large bunches and develop into purple-black berries (S. nigra 2).

Use
The elder berries are used for making wine and jam. In Central Europe the inflorescences are baked in dough and eaten.
